Our 20 Min Meal Class was AWESOME!

We had so much fun in our 20 Min Meal Class! The recipes were nice and easy, but the taste was out of this world! We sampled foods from Breakfast to Dinner but we decided to eat backwards! So we had dinner first and breakfast ended up being the best dessert.. I mean treat ever!!

Our first course was Buffalo Cauliflower Tacos, literally from Jesus! These tacos have just the right spice to wake you up from food boredom! They are filled with dark leafy greens, topped with perfectly baked Cauliflower bathed in Buffalo Sauce from Sweet Baby Rays, and Franks Buffalo Sauce and drizzled with fresh Guacamole Salsa! The Best Vegan Grilled Portobello and Cheez Sandwich

OMGGGGGGGG!!! Does anyone loves mushrooms as much as I do? I will drool in public for a good sandwhich with  some portobello mushrooms on it!  Do you hear me! I will.  I want mushrooms on EVERYTHING.

It’s All About That PINK Baby!!!

Without salt we could not exist. As Chef Que would say – Let’s unlearn to relearn.

Our bodies need salt (sodium). Our cells are dependent on it. As Divine Creation, it’s apart of our makeup. Think of sodium as 1 source of energy to our cells  — that 1 source that must be at the perfect balanced ratio so we do not have too much or too little. 

Now I know, some of you may be thinking, What???!!! I’ve always been told sodium is NOT good for me. DON’T eat salt. DON’T use salt. And personally, I get so mad about it because my food taste so bland without it!!! Like, really? I don’t want to just eat Blah! 

Ok, ok, ok, so there is some truth behind WHY we have heard phrases like this – but let me balance it out a bit — too much salt for you is NOT good but too little is NOT good for you either.

Quick Eggplant Recipe for Dinner #Vegan or Not!

Eggplant is a Fruit that everyone thinks if a vegetable, and on top of that, many of us walk by it because its not a normal item that people cook everyday in a regular household.

That’s all about to change after today. This recipe is super simple, and easy.  It tastes pretty fricking amazing. My husband is not an Eggplant lover, but he ate it, and said, “Make it like this every time.”  That my friends is sign that I did my job! LOL!  The kids #HulkSmashed it as well!  I feel pretty accomplished!

Its great for you too! Eggplant is a great source of dietary fiber, Vitamin B1 and Copper. This fruit is loaded with manganese, vitamin B6, niacin, potassium, folate and vitamin K. (more…)

Indoor BBQ? #NoProblem
Alright family, have you ever had a taste for something, but in the end you are missing one of the main ingredients?
Well, yesterday, it was me!!! I wanted to grill everything! I mean everything! I wanted grilled carrots, grilled asparagus, grilled mushrooms, grilled corn, grilled veggie dogs, and grilled salmon for the meat-eaters in my house. I told you… ALL GRILLED EVERYTHING! As soon as I left work, I hit the grocery store and BOOM, I had a cart filled with all the items that I wanted.
My mouth was watering as I seasoned everything to perfection. I got my husband to go out and clean the grill, load some fresh charcoal, and you know what? THERE WAS NO FLIPPIN CHARCOAL!!!!! Do you feel my frustration? (Now banging my head up against the wall)
I didn’t feel like going back to the store, because I’m a working Mom, and my spirit was tired. I had to make a way out of no way! OKAY!!!
So, I made an executive decision (lol)… Indoor BBQ!!!
How I did it, you may ask. Well, let me elaborate.
I made an olive oil, lemon, pepper, and smoky mesquite glaze (so it had a smoked flavor), poured it in the bottom of the pan, and put the carrots (halved) in it. I also poured a bit on top to keep them moist. I popped those bad boys in the oven, until they were almost soft. Then, I put a layer of asparagus, and if they were too fat, I slit them down the center. I topped them with garlic, salt, and olive oil. I let those cook until they were almost done, then… the final topping was added: tomatoes and baby bella mushrooms!! OMG!!! Best tasting veggies #EVER!!! The best part was that they tasted as if they were grilled!! Success.
The meat eaters were thoroughly impressed! The salmon was perfectly moist and flaky, with the smoked flavor…#Indoorbbq.. Yes we did that! The corn that I rubbed with the mesquite flavoring, olive oil, and Montreal steak seasoning…..#Bomb.com. This meal made mouths happy. This meal made every soul in my house sing.
My Indoor BBQ, was pretty freaking awesome!!!!!

How to Read Food Labels

The question of the day goes to all the last minute shoppers like myself who need to go grocery shopping for the holiday (today.. Yep. I’m super last minute). Do you read labels at the grocery store? Or do you just Grab-N-Go?

In the last blog, we talked about grocery shopping and how to keep it healthy. Now, I want to take it a bit further and look at the items that you are purchasing, read the label and understand what it’s telling you.

Taco Tuesday

Who wouldn’t want tacos on Tuesday?

Seriously, after a great weekend, you have to come face to face with Monday (grrrrr), leaving you physically drained and waiting for the weekend to come back around again. Then, Taco Tuesday arrives and it gives you the boost you need, because you know…a fresh, savory taste is coming…wrapped in a warm tortilla and topped with all the fixings – fresh lettuce, tomato, salsa, and guacamole!!! #BlessGod!! Mexican Black beans topped with sriracha (I’m hungry right now!!)

I was trying to figure out the best way to kick off The Cooking with Que blog, but it had to be simple…and incorporate something that everyone loves. #TACOS!!!! (Come on saints… I know your mouths are watering right now lol!!!!) The #TacoTuesday hashtag has taken over the web and I make a pretty tasty Taco (let’s be honest) soooo……. I’m Vegan …….. but…. LET’S TALK CHICKEN!!!!!

Who knew shopping for chicken to feed my family would be such a big deal!

I mean seriously. Once you figure out what you’re cooking for dinner you should be able to just go to the grocery store, grab what you need and get out right?
WRONG!!!
I feel like you need to be a certified nutritionist to even go to the grocery store! It’s ridiculous. I already have to read packages, because I’m the vegan of the family and allergic to dairy!!! (sometimes people think I’m saying “lactose intolerant”….. NO!! THERE IS A DIFFERENCE) Sigh!!!
Have you ever read the back of packaged chicken? I thought it would just say – Ingredients – chicken? Ha! A joke!
Each package had different verbiage. I’m going to give you the basics of what to look for and how it reads.
